This miso-marinated sablefish recipe is a Japanese restaurant favorite, loved for its deep umami flavor and caramelized miso glaze. It’s simple to make at home and pairs perfectly with steamed rice and sautéed greens.

Ingredients (Serves 2-3)

  • 2 sablefish fillets (about 6 oz each)
  • ¼ cup white miso paste
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • 1 tsp grated ginger

For Serving:

  • Steamed rice
  • Sautéed bok choy or spinach
  • Sesame seeds & green onions for garnish

Instructions

1️⃣ Prepare the Miso Marinade

  • In a bowl, whisk together miso paste, mirin, sake, soy sauce, honey, sesame oil, and grated ginger until smooth.

2️⃣ Marinate the Sablefish

  • Pat the fillets dry and coat them evenly in the miso marinade.
  • Cover and refrigerate for at least 6 hours, preferably overnight for best flavor.

3️⃣ Cook the Sablefish

  • Preheat oven or even airfyer to 400°F (200°C).
  • Gently wipe off excess marinade to prevent burning.
  • Place fillets on a parchment-lined baking sheet and bake for 10-12 minutes, until the fish is flaky.
  • For a caramelized glaze, broil for 1-2 minutes at the end.
