We had ordered a whole halibut in the summer, promptly ate the whole thing and made stock with the bones. We loved it so much that we ordered 10 lbs Halibut fillets. They are absolutely fresh and tender and I've variously prepared them breaded and fried, baked, poached, steamed, smoked. This is top quality seafood.
