Wild Sablefish Collars
Sablefish, also known as Black Cod, are from the waters in Haida Gwaii, is famous for its velvety texture with a rich and delicate buttery flavour with a hint of sweetness.
Black Cod Collars are decadent, flaky and contains high fat content making it a forgiving cut to cook. Collars are cut from along the fish clavicle behind the gill where you find some of the richest and most delicious meat on the fish. Sablefish (Black Cod) collars are delicious when grilled!

Wild Sablefish Collars
I defrosted wild sablefish collars in the frig and cleaned them thoroughly which took some effort. I then steamed them with minced garlic, black beans, pepper, ginger and soya sauce. They tasted very fresh and yummy without any bad fishy smell at all. Most collars have big piece of tender meat.
My family likes fish collars, compared with sablefish in whole or fish steak, the collars is over priced! A lot of work involves in cleaning the fish... that's why can buy it often like the salmon steaks!
